Just...post a topic in the fanart section, I guess. From what I read in those topics, I think you just post a drawing of your character and let other people draw certain things for you, and the winner gets to be your character's mate.

Just building on what Kari said, it's often for if one of your characters are feeling 'lonely' or you can't think of a mate for them you can hold a contest. Then people enter and make up a character that could be a possible mate. When your deadline is over, you just choose a winner.
