I noticed that in the "Lion King" Sarabi had black around her ears & that the rest of the lionesses didn't. Was that just a mistake or on purpose or was it to notice her from her & Mufasa's pride?

It was part of her design, to distinguish her looks from all the other lionesses. Yes that would be where simba got his ear stripes from. It just makes her look different.
